Trypsin is a member of the serine protease family. The active site amino acid residues of trypsin include His and Ser. Trypsin is produced by removing the N-terminal hexapeptide from trypsinogen by cleavage at the Lys-Ile peptide bond. Trypsin will cleave the peptide on the C-terminal side of the lysine and arginine amino acid residues.
